Truffle condiment with “Aceto Balsamico di Modena PGI” (Balsamic Vinegar of Modena)

Truffle-flavoured rice

Add the “Truffle-fl. Rice” in a large saucepan with a pre-heated trickle of olive oil and let it brown for about 1 minute over moderate heat. While stirring, pour half glass of water (or white wine) and let it evaporate. Then pour gradually 700ml of warm water and let it evaporate completely (about 15 minutes). Add salt to taste. Add a knob of butter and then mix in the butter for a minute.

In a pan brown the onion, add the rice and toast briefly. Pour little by little boiling water and carry on adding water until the rice is soft.
